Banana Bread
I hate wasting food. I guess the whole "there are starving children in China" comments really stuck with me. Last week I noticed there were some bananas reaching the final stages of life and decided they needed to be re-purposed. Somehow I have managed to never make banana bread -- even though I've eaten it a lot in the past. I got this recipe from Simply Recipes. I liked it but I think I am more of a banana nut bread kind of girl and I would probably try something different (with walnuts) in the future. For you non-nut people, this is a great simple recipe.
- 3 or 4 ripe bananas, smashed (I used my potato masher)
- 1/3 cup melted butter
- 1 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups of all-purpose flour
Steps
1. Preheat the oven to 350°F (175°C).
2. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
3. Mix in the sugar, egg, and vanilla.
4. Sprinkle the baking soda and salt over the mixture and mix in.
5. Add the flour last, mix.
6. Pour mixture into a buttered 4x8 inch loaf pan. (I just used butter flavored spray - lazy!)
7. Bake for 1 hour
See how simple that was? Please don't buy those sketchy mixes at the grocery store, I know you can handle this one! Its so simple and yummy....
