Beef Hash
This recipe is courtesy of Christopher's mom Linda and is a favorite of ours for these cold winter months. It is a simple recipe that we eat for dinner and then eat for breakfast with a side of eggs.
Ingredients:
1 Russet Potato
1 lb. of stew meat or steak meat cut up into 1 inch cubes (you can also use any leftover steak you have) (trim the fat off of the meat)
1 small/medium onion, diced
1 green bell pepper

5. When the veggies are softened, add a few glugs of Worcestshire sauce - we really like the flavor of Worcestshire sauce so we add about 2 tablespoons but this is all about preference. At this point I also try to scrape the bottom of the pan to pick up the juices from the beef.

Steps:
1. Cook a russet potato in the microwave for about 12 minutes until its soft and cooked. Let the potato cool until you can cut into large bite sized pieces.
2. Once the potato is cut into pieces, heat a nonstick pan. You can put some olive oil in the pan if you are worried about the potato sticking. Cook the potato slowly over medium heat to get all of the steam and moisture out of the potato. This will take about 30 minutes so account for that when you are making this recipe. You want the potato to be nice and crunchy like you would get at a diner for breakfast.
3. Cook the meat if you aren't using leftovers. Typically, I heat a heavy skillet over medium high heat with a coating of olive oil. Next, generously salt and pepper the bottom of the pan (about 1/2 tsp of each). Cook the meat in small batches so that each piece can sit directly on the pan. I drop the meat into the hot pan and let it sit for about 3 minutes so that a nice, solid crust forms on the side of the meat. Use tongs to flip the meat and cook for another 3-5 minutes until it is done to your liking.
4. In the same pan that you cooked the meat in, add the onion and green pepper and cook until soft (about 5 minutes). (SIDENOTE: if your meat is already cooked, heat up a little olive oil, salt and pepper and add the meat at this time with the veggies)
6. Add the hot crunchy potato pieces, mix and serve with ketchup.
