Ravioli with Italian Squash

Here we have a simple, delicious recipe that I made up on my own. Thats a true "cook" - someone who makes stuff up without following a recipe right? I use recipes 99% of the time but I figured I would post this for your enjoyment. Its nothing fancy, but it is yummy.


Ingredients
1 package of store bought cheese ravioli (aren't you shocked I didn't make my own? yeah, me too... too lazy!) 
1 can of diced tomatoes (14 oz)
1 small yellow onion, diced
1 clove of garlic
3 Italian squash (the small green ones)
parmesan cheese
olive oil 

1. Boil water with about 1 tablespoon of olive oil in it so the ravioli don't stick together. 
2. In a skillet, heat up about 2 tablespoons of olive oil over medium heat. Chop up your onion while it warms up. When the pan is hot, add your onion and saute until the onion softens. Add the clove of garlic and saute for about 30 seconds until you can smell it. 
3. Add the diced tomato to the onion and garlic. I drained off a little bit of the juice, but it your choice of how much liquid you want in the sauce. Let the sauce simmer for about 5 minutes. I also added about 1 teaspoon of: fresh black pepper, crushed red pepper (spicy!), salt and oregano. Taste the sauce after you add each spice and see what you like. I probably ended up adding more salt. 
4. In another skillet (I'm sorry - 3 pans, so ridiculous), heat up 2 tablespoons of olive oil over medium heat. Slice the squash into 1/4-1/2 inch pieces. When the pan is hot, toss the squash in and let the pieces get brown. 
5. Add the ravioli to the water, they will only take about 6 minutes to cook but follow the package directions.
6. When the ravioli are nearly done, add some Parmesan cheese to the squash to create a little bit of a crunchy outside. 
7. Put the ravioli in a bowl, spoon some sauce over and add the squash. 

I feel silly posting such a simple recipe but maybe it will be your new favorite. Here is a picture, it was colorful!
