Twice Baked Potatoes
So I totally forgot to take a picture of these beauties because I was so excited to eat them. I'm sorry. There is also not really a recipe, so again - forgive me. I'm going to tell you what I did and you can do whatever you want. That's the great thing about this recipe, do whatever you want!
Ingredients
Baking Potatoes (1 per person)
Olive Oil
Milk
Butter
Sour Cream
Shredded cheese of your choosing
Turkey (or ham) (or no meat at all)
Salt
Pepper
Garlic Powder
Onion Powder
Steps
1. Scrub your potatoes nice and clean. Take a fork and poke some holes so your taters don't explode. Microwave for about 10 minutes, add about 2 minutes if you are doing a lot of potatoes.
2. After you carefully (wearing oven mitts) pull those hot potatoes out of the microwave, brush some olive oil all over the skins and pop them into a 400 degree oven for about 10 minutes to crunch up the skins.
3. Let the potatoes cool until you can hold them (or if you are impatient like me, buy these awesome silicone grips -- they can go right in the dishwasher afterwards! AWESOME!). I sliced my potatoes about 1/4 of the way in and scooped out the guts into a medium sized bowl. You want to leave about 1/2 an inch or so in the potato so that it can support the yummy filling you are about to place inside of it.
4. In the medium bowl, add a little butter (1-2 tbsp depending on how you like it and how many potatoes you made), a little milk (again, maybe about 2 tbsp), and an 1/8 cup of sour cream. Mash them up with a potato masher. Again, you can put anything you typically like in your mashed potatoes. Chop up any meat that you would like to put. For 3 potatoes I cut up about 4 pieces of deli turkey into small pieces. Next, add cheese of your choosing, I chose cheddar cause its what I had. I season the mash up with salt, pepper, garlic powder, onion powder and whatever else is within arm's reach.
5. Scoop the mixture into the potato skins and bake on 400 for about 20 minutes or until the tops are slightly brown.
I ate mine with just a little bit of Lea & Perrins Worcestershire Sauce. Oh and we had broccoli on the side, because you can't exclusively eat starches for dinner. Gosh, I hope I spelled potato correctly throughout this recipe, I always worry since the Dan Quayle incident of 1992.
